HOT: Frozen Banana icecream

It’s going to be 34 degrees out today and I’m 7 months pregnant. Needless to say, I am feeling HOT.

My go-to frozen treat is frozen banana ‘ice-cream’. It’s not actually ice-cream because there’s no dairy, sugar, churning etc involved. If you’ve never had frozen banana ice-cream you will LOVE this.

Basically what I do is buy the really cheap, really over-ripe bananas from the local greengrocers – you know the ugly black ones which are going for $1 a kilo. I peel them, break them into half and put them in plastic containers to freeze.

When I feel the need for an ice-cream treat (but want to save my wallet and my waistline) I take out 2-3 frozen banana halves, thaw them out a little and then use a stick blender to blend them by some magical alchemy into a smooth, ice-cream-like mass. The result is a full flavoured soft serve ‘ice-cream’ for one that is healthy and filling and will satisfy the need for something cold when the weather’s hot. And it’ll cost you something like 20 cents.

You can add cinnamon, berries, cocoa, honey and any number of other ingredients to the mix, but my favourite is still plain ol’ banana. It’s seriously good – and I bet if you give it to your kids they’ll never know that they’re not eating ice-cream!
