HOT: Honey and Cinnamon Pikelets from Healthy Family, Happy Family

I was given Healthy Family, Happy Family by Karen Fischer as part of a goodie bag ages ago and it has lay dormant on my bookshelf until now. I flicked through it recently to see whether it had any ideas for healthy sweet treats and came across the recipe for honey and cinnamon pikelets.

These have been a real winner with NKOTB – she can’t stop eating them! I store them in a container in the fridge and dole them out, warmed slightly in the microwave or oven, as required. They are not a particularly messy finger food as the pikelet doesn’t become a sodden goo after a few bites, so they’re good for travelling too.

Ingredients: Makes 20 toddler-sized pikelets

  • 1 cup milk
  • 1 tsp lemon juice or apple cider vinegar
  • 1 cup wholemeal self-raising flour (though it works with wholemeal plain flour as well, I made that mistake once)
  • 1/4 tsp bicarb soda
  • pinch of cinnamon
  • 2 tbsp honey, melted or agave
  • 1 egg
  • 1 tsp melted butter or coconut oil

In a small bowl sour the milk by mixing it with lemon juice and set aside.

In a large bowl mix the flour, bicarb soda, cinnamon. Then add soured milk, honey, egg, butter and whisk into a smooth batter.

Heat a dot of butter or a dash of oil in a frypan (if you use a non-stick pan I find you don’t need either) on medium heat and add heaped tablespoons of the batter into the pan. Cook until bubbles form on top, flip and cook on other side. Set aside and repeat with remaining batter.

NKOTB eats the pikelets plain as I think they are sweet enough, but you can top with traditional pikelet toppings like jam and cream or lemon and icing sugar.
